Dutch Apple Pie

2 cups flour
1 cup packed brown sugar
1/2 cup quick cooking oats
3/4 cup butter, melted

FILLING:
2/3 cup sugar
2 Tbl cornstarch
1 1/2 cup cold water
3 cups diced peeled tart apples
1 tsp vanilla extract

directions:
in a large bowl, combine the flour, brown sugar, oats and butter; set aside 1 cup for topping.  press remaining crumb mixtgure into an
ungreased 9-inch pie plate; set aside.

For Filling, combine the sugar, corn starch and water in a large sauce pan until smooth.  bring to a boil.  cook and stir for 2 minutes or until thickened.  remove from the heat:  stir in apples and vanilla.

Pour into crust: top with reserved crumb mixture.  bake at 350, for 40-45 minutes or until crust is golden brown.  cool on a wire rack.

makes 6-8 servings

Applesauce cookies

this is the cookie recipe of Grandma Hartman's.
I remember her making these. Everyone loves this
recipe.
1/3 cup fat
1 cup sugar
1 3/4 cup sifted flour
1/2 tsp baking poweder
1 tsp baking soda
1/2 tsp salt cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
1/2 cup raisins
1 cup rolled oats
1 cup applesauce

Cream together fat, sugar, blend in the egg.
sift together flour, baking powder, baking soda, salt,
cinnamon, cloves, & nutmeg. mix in raisins and rolled oats.
add to creamed mixture applesauce, blend together
beat well, drop dought by tsp fulls into
greased baking sheet. bake 375 oven for 10 minutes.

Grandma's Gingerbread Waffles

This recipe is one Ellen Hartman made. My Dad Phil
loves these waffles and remembers his mom making
them.

1/2 cup shortening
2/3 cup brown sugar
2 eggs
1/2 cup molasses
3/4 cup sour milk
1 tsp baking powder
2 cups flour
1 scant tsp baking soda
1 tsp ground ginger
1/2 tsp ground cinnamon
1/8 tsp ground cloves
Whipped Cream
Cream shortening and sugar, add the beaten
egg, molasses and milk. then the dry ingredients
sifted together twice. Beat just until smooth and
bake in a waffle maker until done. Top waffles
with the whipped cream.

Butterscotch Delights

This is Barbara Hartman's Cookie Recipe
These are great giant cookies.

2 1/2 cup sugar
2 1/2 cup brown sugar
2 1/2 cup shortening
5 cup flour
2 1/2 tsp baking powder
5 eggs
2 1/2 tsp baking soda
2 1/2 tsp vanilla
2 1/2 tsp salt
1/4 cup milk
5 cups quick oats
(chocolate chips if desired)
Combine sugars, shortening, eggs, vanilla & milk.
mix til smooth. add flour, soda, baking powder,
salt. beat til smooth, add oats. mix well. bake 350
15 minutes if giant cookies. dip out with large spoon,
6 per cookie sheet. take out before they look done completely.
will crisp as they sit.

Mom's corn bread

This great corn bread recipe is Barbara Hartman's.
It is my favorite

1 cup yellow cornmeal
1 cup flour
1 tbl baking powder
1 tsp salt
1/3 cup applesauce
1 egg
1 cup milk
combine dry ingredients in bowl and mix well.
combine applesauce, eggs and milk together.
mix well. stir in dry ingredients until just blended.
pour into well buttered 8 inch square pan.
Bake 400 degree oven, 25 minutes or until done.

Sloppy Joes

1 lb ground beef
1 med onion chopped
1/2 cup diced celery
1 clove Garlic minced

combine above ingredients and fry until
beef is browned and vege's are partly cooked.
Drain off oil, add salt, 1 tsp Worcestershire sauce,
1/3 cup catchup. Stir, let simmer 20 to 30 minutes.
Serve on toasted buns.

Chimichangas

1 lb ground beef
1 med chopped onion
1/2 green pepper chopped
1 can refried beans
1 cup shredded cheddar cheese
1/3 cup chili sauce
1/2 tsp salt
12 10inch flour tortillas
place mixture in tortillas, roll up
in a frying pan sprayed with pam
fry chimichangas on each side until browned.
top with guacamole, sour cream, and salsa

Guacamole

3 Avocados
1/2 tsp salt
1 tbsp lemon juice
1/8 tsp Tabasco
1 tsp Worcestershire sauce
1 clove garlic
2 med tomatoes, peeled, seeded and finely chopped
combine all ingredients

Vegetarian Chili

3 cans Mexican flavored tomatoes
2-3 cand beans (Kidney, pinto you choose)
1 pkg chili seasoning
1 chopped onion
1 chopped carrot
1 chopped celery
saute vegetables in pam, combine vegetables and remaining
ingredients in crock pot.
check in two hours
add more spices if desired or salsa

Gramma's Dinner Rolls

This recipe is Grandma Ellen Hartman's.

1 cup scalded Milk
1 egg
1 tbsp butter
1/2 cup sugar
1 tsp salt
1 pkg yeast in 1/2 cup lukewarm water
4 cups sifted flour

Scald milk, add butter, sugar, salt=let stand until
lukewarm add egg, yeast and 1 1/2 cup flour and
beat. (#2 speed if using mixer) continue beating
1 minute longer while adding another 1/2 cup flour.
stir in rest of flour-until dough is stiff enough to handle.
let rise until doubled in bulk - about 2 hours. place on
lightly floured board and knead gently for 1 minute.
shape into rolls. place in buttered pan, setting so they touch lightly.
let rise until doubled. bake 12 to 45 minutes at 425 degrees.
makes 20 large rolls.

No Fail Sugar Cookies

1/2 cup Butter
1 cup sugar
1 large egg
2 to 2 1/2 cups flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp vanilla

cream together first ingredients, then the rest
of the items and mix together. Divide dought in two parts.
chill 1 to 2 hours so it will be easy to handle.
roll dough, one part at a time, to 1/8 inch thickness
and cut with cookie cutters. Keep other part of dough
chilled until ready to roll. Transfer to cookie sheet and
bake 350 for 10 minutes. cool, frost
makes approximately 2 dozen cutout cookies

The Best no bake cookies

2 cups sugar
1/2 cup Margarine
1/2 tsp Salt
1/2 cup milk
3 Tablespoon cocoa

put all ingredients in heavy saucepan,
Boil about 2 minutes, remove from heat.
Stir in 3 Cups quick oats, 1tsp Vanilla.
Mix well, drop by Teaspoon full onto
waxed paper. let set until hard.
Makes 3 dozen cookies

Chipotle Ranch Chicken Salad

2 Oz leaf lettuce
1 boneless chicken breast, grilled and sliced
1/2 small Avacado, diced
1/2 cup roma tomato, sliced
2 pieces bacon, fried until crisp
2 tablespoons Chipotle Ranch Dressing

Top the lettuce with the remaining ingredients : serve at once
Makes 1 serving

Chipotle Ranch Dressing

Make 1 envelope of Hidden valley Ranch dressing mix
according to the package.
to the dressing add:
1 tsp Chipotle chile powder
3 Tablespoons Chopped cilantro

Mix everything and chill before serving.

Snicker Salad

1 Bag snicker mini bars
(or enough regular size to equate to that amount)
6 reg size apples (3 green - 3 Red)
1 tub of cool whip

cut mini snickers in quarters, put into bowl
dice apples (peel only if you want) mix with cool whip.

Ham and Cheese Dip

1 8oz cream cheese
1 1/2 cup sour cream
5oz diced ham
1 small can diced green chilies
3 cups grated sharp cheddar cheese

put all above in oven safe dish
blend, cook 30 minutes - 350 oven
stir and cool - serve warm with tortilla chips

Artichoke Parmesan Dip

2 large cans artichoke hearts
(quartered, drained)
1 cup mayonnaise
3/4 cup Parmesan cheese
1/2 tsp garlic powder
dash white pepper

Mix all ingredients, put in shallow dish.
refrigerate overnight. Serve with yellow corn tortilla chips

Chocolate Waffle Cookies

1 cup Cocoa
1 cup butter
4 beaten eggs
1 1/2 cup sugar
2tsp vanilla

Melt butter, mix in eggs, sugar, stir
in flour, cocoa & vanilla. drop by spt on med hot waffle iorn.
Do this quickly, do not croud. Bake for 50 - 60 seconds. remove
with a fork. cool and frost or dust with powdered sugar.

Mother Goose Popcorn

combine 2 cups sugar, 1 cup Milk. Add 2 Tbls butter
and 1 tsp light karo syrup. Stir until it comes to a boil.
let boil 12 minutes or until a small bit dropped in a cup
of cold water forms a "soft" ball. be careful not to scorch.
Add a few drops of food coloring and 1 tsp Vanilla.
Pour immediately over 2 air poppers of popcorn. Stir
constantly, scraping the bottom of the bowl until cool.
Seems very sticky first few minutes, but when cool,
each kernel is covered with coating and not sticky.

Peanut Butter Fingers

Ingredients:
1 cup (2 cubes) Butter
1 cup Sugar
1 ½ cup brown sugar
2 large eggs or 3 medium
1 ½ Tsp. Vanilla
18 oz. Creamy Peanut Butter
1 ½ Tsp. Baking soda
½ Tsp. Salt
3 cups flour
3 cups Rolled Oats

Directions:
Cream butter and sugars, add eggs and vanilla. Beat until fluffy. Add ½ of the peanut butter, mix well. Add all dry ingredients together and add to the creamed mixture. Spread on 18 x 26 x 1 pan. Bake at 325 for 10-12 minutes DO NOT OVER BAKE.

Spread with remaining peanut butter and frost with Chocolate frosting.

Cooked Frosting:

6 TBL. Butter
6 TBL. Cocoa
6 TBL. Water

Combine in bowl and microwave on high for 30 seconds. Add powdered sugar until thick. Add ½ Tsp. Vanilla.

Homemade Oreos

Cookie: 2 boxes cake mix (dry)
1 cup butter
4 eggs

Filling: 1 block cream cheese
1 3/4 cup powdered sugar
1/2 tsp. vanilla
2 tbls. butter

Bake cookies on ungreased cookie sheet on 350 deg. for 6-8 min. ( check at 5 1/2). When the cookies have been cooled, spread the filling in the middle of two!

Apple Crisp

4 Cups Sliced Tart Apples
2/3 to 3/4 Cup Packed Brown Sugar
1/2 Cup flour
1/2 cup oats
3/4 tsp Cinnamon
3/4 tsp nutmeg
1/3 cup Margarine Softened

Heat oven to 375 degrees. arrange apples in greased
square pan 8x8x2 in. Mix remaining ingredients,
sprinkle over apples. Bake until topping is golden
brown and apples are tender. About 30 Min.
serve warm and if desired with Ice Cream. 6 servings

Chile Verde Chicken Enchiladas

18 corn Tortillas
cooking spray
1 can of chicken, or any cooked chicken (good for left overs)
1 can green enchilada sauce
1 can cream of chicken soup
16 oz Monterey Jack cheese, grated
1/2 cup thinly sliced green onion

Preheat oven to 375 degrees.

In a frying pan, saute each tortilla over medium-high heat
until cooked through but not crisp. about 1 minute on each
side. Remove meat from chicken and shred with two forks.

In a small mixing bowl, mix together enchilada sauce and
soup. pour 1 cup of sauce in the bottom of a 9X13-inch pan.
roll about 1/3 cup cheese, 1/4 cup shredded chicken,
and1 tsp green onion in each tortilla. Place each roll in pan.
seam side down. Pour remaining sauce over top of rolls
and sprinkle remaining cheese on top.
Bake 25-30 minutes, or until cooked
through and bubbling.

Makes 8 servings.

Magic cookie bars

1/2 C (1 stick) butter or margarine
1 1/2 cup Graham cracker crumbs
1 can eagle brand sweetened condensed milk
1 cup chocolate chips
1 cup butterscotch chips

heat oven to 350 degrees, place 9X13 pan in oven with butter to melt.
after butter is melted take out of oven. spread on graham cracker
crumbs, sweetened condensed milk, then add chips. put back in
oven for 25 minutes. take out and cool. cut into squares and serve.
(hint- I spray the pan with cooking spray)

Baked Ziti

1/2 pound dried Ziti
16 oz Ricotta Cheese (part-skim)
3 cups shredded mozzarella cheese
3 cups Spaghetti sauce
1/2 cup grated Parmesan Cheese

heat oven to 230 degrees. bring a large pot of
salted water to boil and add Ziti. cook until tender
about 8 minutes. Drain the pasta
place the ziti in a large bowl. mix with the ricotta
and half of the mozzarella. grease a 9X13-inch
casserole dish. spread half of the spaghetti sauce
on the bottom of the pan. Add the ziti mixture and
cover with the remaining sauce. sprinkle with
Parmesan and remaining mozzarella.
bake for 20 to 30 minutes or until the casserole
bubbles on edges.

Vegetarian Chili

John's Special Cookies!

1 cup butter, softened
1 cup packed brown sugar
1/2 cup white sugar
2 eggs
2 teaspoons vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoons backing soda
2 teaspoons ground cinnamon
1 teaspoon salt
3 cups quick cooking oats
1 1/2 cup chopped pecans
1 1/2 cup cinnamon chips

Directions
1. Preheat the oven to 325 deg. F
2. In a large bowl, cream together butter, brown sugar, and white sugar until fluffy. Beat in eggs one at a time, then stir in the vanilla. Combine the flour, backing soda, salt and cinnamon; stir into the creamed mixture. Mi in the oats and nuts until just blended. Drop by the heaping teaspoon onto ungreased cookie sheets. Cookies should be at least 2 inches apart.
3. Bake for about 12 minutes in the preheated oven. Cool cookies ona wire rack.

Cream Cheese Frosting

8 oz cream cheese (room Temp)
1/2 Cup margarine (room Temp)
1 tsp vanilla
3 cups powdered sugar(sifted)
1 Tbl Milk

Combine all ingredients and mix until smooth.
spread on Cinnamon Rolls, Enjoy

Cake Mix Cookies

1 cake mix (any flavor)
2 eggs
2 Tbl oil (butter flabor if you have it)
2 Tbl water for crisp cookies, 3Tbl water for soft cookies

Preheat oven to 375 degrees
Mix all ingredients
can be rolled and chilled then sliced. dropped by the spoonful,
or rolled into balls and flattened.
Bake for 8-10 Minutes on greased cookie sheet

Turkey Bundles

3 oz. cream cheese
2 tbl margarine
1/4 tsp salt
1/4 tsp pepper
2 Tbl milk
1 Tbl chopped onion
1 Tbl pimento, optional
2 cups diced turkey (or chicken)
1 pkg Pillsbury Crescent Rolls

Mix together all ingredients except crescent rolls.
put two crescent rolls together to form a rectangle
and put a spoonful of turkey mixture in the middle
and then make into a bundle. Bake 350 degrees
for 15-20 minutes. Serve with Gravy
(for the gravy I mix a can of cream of chicken soup
with milk and serve on bundles)

Snicker Salad

1 Bag Mini Bars Snickers
(or enought regular size to equate to that amount)
6 reg size Apples
1 tub of cool whip

Cut Mini Snickers in quarters, put into bowl, dice
apples (peel only if you want) Mix with cool whip.
serve.

Baked Ziti

1/2 pound dried Ziti
16oz Ricotta Cheese (part-skim)
3 cups shredded Mozzarella Cheese
3 cups Spaghetti Sauce
1/2 cups grated parmesan cheese

Heat oven to 350 degrees, Bring a large pot of
salted water to boil and add the Ziti. Cook until
tender, about 8 minutes. Drain the pasta.

and half the mozzarella. Grease a 9X13 inch

Easy Stromboli

1 Loaf of Frozen Bread Dough
1/3 Cup Pizza Sauce
1 pkg Canadian Style bacon
1 pkg Pepperoni
1 cup shredded Mozzarella cheese
1/4 cup chopped Green pepper and /or onion if desired
1/4 tsp dried Italian seasoning
1-let bread dough thaw for several hours until it can be rolled out.
2-heat oven to 400 degrees, spread dough on greased cookie sheet.
Press dough into a rectangle. spread sauce on dough to within
2 inches of long sides and 1/2 inch of short side.
3-Top with Canadian bacon, pepperoni, cheese, peppers and Italian
seasoning. Fold long sides of dough over filling, pinch to seal.
Pinch short side to seal
4-Bake at 400 degrees for 15 to 20 minutes or until golden brown.
Makes 6 servings.

Sloppy Joes

It took me a while to find a sloppy joe recipe I liked - and I love the tomato soup in this recipe. Actually, I just love tomato soup in general.

2 lbs. ground beef
1 tsp. garlic salt
1/2 cup chopped onion (optional) or I used dehyd. onion
1 cup ketchup
1 (10 oz) can tomato soup
2 TBSP vinegar
2 TBSP worcestershire sauce
2 TBSP brown sugar
8 hamburger buns

In a large skillet, brown ground beef. Sprinkle with salt, add onion and cook until tender. Stir in remainder of ingredients and simmer for about 30 minutes.

Shepard's Pie

This is Starr's most requested comfort food...and one of those few dinners I can make that no one complains about. Enjoy.

1 lb ground beef
1 Tbsp. olive oil
1/2 cup chopped onion
1/4 tsp pepper
1 (14 oz) can cut green beans, drained
1 (10 3/4 oz) can tomato soup
6 potatoes , peeled, boiled and mashed (or use your cannery potatoes)
1/2 cup milk
1 tsp. salt
2 cups grated cheddar cheese

Brown ground beef in oil. Add onion, slat and pepper and saute until onion is tender. Put into a greased 9 x 13 or casserole dish baking dish. Top with drained green beans. Spread tomato soup over beans. Combine mashed potatoes, milk, and salt. Mix well. Spoon potatoes over mixture. Top with grated cheese. Bake 350 for about 30 minutes. Serves 6.

Chewy Peanut Butter Blossoms


About 48 HERSHEY'S KISSES Brand Milk Chocolates
1 can (14 oz.) sweetened condensed milk (not evaporated milk)
3/4 cup REESE'S Creamy Peanut Butter
2 cups all-purpose biscuit baking mix
1 teaspoon vanilla extract
About 1/4 cup sugar (awww...real sugar)


Instructions:

1. Heat oven to 375°F. Remove wrappers from chocolate pieces.

2. Beat sweetened condensed milk and peanut butter in large bowl until smooth. Add baking mix and vanilla; blend well. Shape into 1-inch balls; roll in sugar. Place 2 inches apart on ungreased cookie sheets.

3. Bake 6 to 8 minutes or until very lightly browned (do not overbake). Remove from oven; immediately press chocolate piece in center of each ball. Remove from cookie sheet to wire rack. Cool completley. Store in tightly covered container. About 48 cookies.

Mary's Peanut Butter Cookies in the raw

1 bag betty crocker peanut butter cookies mix
1 tbs water
3 tbs vegetable oil
1 egg
1 box of sugar in the raw

Preheat oven to 375 deg.
Mix cookie dough acording to back of bag. Scoop teaspoon size ball of cookie dough into a small bowl filled with about 2/3 cup of sugar. Shake dough around in bowl until all of the dough is sugarized. Repeat with the rest of the cookie dough. Bake for 8-10 min.

Just for fun: Take the wrapers off of Hershey kisses and place in the middle of the cookies right after they come out of the oven!
